- 1 medium bell pepper (diced)
 - 1 small red onion (diced)
 - 2 (15½ ounce) cans black-eyed peas (drained and rinsed)
 - 1 (15¼ ounce) no salt added can corn kernels (drained and rinsed)
 - 3 Tablespoons canola oil
 - 2 Tablespoons vinegar
 - 1 teaspoon cumin
 - ¼ teaspoon salt
 - ½ teaspoon ground black pepper
 - Optional Ingredients:
 - ¼ cup fresh cilantro leaves (chopped)
